Cooking classes at the Hearth & Candle Restaurant

Enjoy a culinary learning experience with the Hearth & Candle chefs!

The renowned Hearth & Candle restaurant at Smugglers' Notch Resort is offering a special experience for the third Summer in a row – cooking classes hosted by the restaurant's New England Culinary Institute-trained executive chef Michael "Tike" Fitzgerald and Hearth & Candle owner Akash Parikh! With a maximum of six students in each class, the learning experience is intimate and hands-on in the Hearth's kitchens; you'll gain the skills and confidence to prepare your own culinary delights.

Everything you need will be provided for you - just arrive ready to participate! At the end of the class, savor your freshly made creations as you enjoy a special lunch with your chef. You'll receive copies of the recipes you prepare in class and a tip sheet to bring home.

The classes include:

Fresh pastas, sauces and fillings: Learn how to prepare fresh pasta dough for fettucini, raviolis and tortellinis. You’ll also learn how to create fillings and sauces to accompany pastas. In addition to a basic dough recipe, you’ll create a basil pesto, a hearty Bolognese sauce, and ricotta ravioli filling. Tuesdays, $90.

Rubs, grilling and smoking: Learn how to prepare a savory rub and marinade, and proper techniques for smoking and grilling to yield a well-seasoned, flavorful and tender meat or poultry dish. Learn how to prepare a thick and hearty barbecue sauce, a paprika-based rub well matched to pork or poultry, a marinade seasoned with rosemary, and grilled potatoes. Wednesdays, $90.

During your cooking sessions the chef will also share tips on knife skills, safety and sanitization, and how to "plate" or set up an eye-pleasing presentation of each dish.

Summer cocktails and liquor infusion: This session includes tips on setting up a home bar and planning for parties, and creating delicious cocktails and liquor infusion drinks perfect for the summer season. You'll prepare a key lime martini, infused mojito and more as you learn how to use the flavors of the season to enhance refreshing alcoholic beverages. Thursdays, $60.
